Whitebait Sandwiches: a West Coast New Zealand Delicacy

It sounded terrible, but it actually tasted quite good. The sardine-sized fry of five different kinds of fish are caught and cooked in an egg batter, eyes and all. The fish are obviously too small to filet. Everyone says that whitebait sandwiches are an acquired taste.

Moana, a Maori woman and a good friend of Catherine, our tour leader, made the whitebait sandwiches while we watched.  We each tried a sandwich, which was surprisingly good.
